Coeliac (or celiac) disease is a condition that affects the small bowel, caused by an abnormal immune response, or sensitivity, to a dietary protein known as gluten. Toby Simmonds first started trading in the market in 1993 when he managed to secure a vacant stall from Gerry Moynihan in the Princes-Street part of the market. At first Toby began with just twelve barrels of basic olives and for his first year was met with plenty of bemused customers who regularly asked what type of grapes they were.
